Ingredients:
1 stick
butter or ½ cup margarine
1 cup
superfine sugar
2 large
eggs
1 tsp
vanilla extract
1 cup
all-purpose flour
1 cup
whole-wheat flour
1 tsp baking
powder
Pinch of
salt
1 tsp baking
soda
3-4 mashed
ripe bananas
2 tbsp fresh lemon juice
¼ cup
pecans or walnuts
Directions:
Cream butter and sugar. Add eggs, one at a time, beating well after each
addition. Add vanilla extract.
Sift dry
ingredients and mix into butter mixture along with mashed bananas and lemon juice.
Spoon into
a greased 9-inch loaf pan. Bake in a
pre-heated oven at 350F for 1 hour. Turn out onto a wire rack to cool.
